Veg Kurma Recipe or Vegetable Korma Curry is a popular Indian curry in which vegetables are boiled and cooked in creamy and aromatic gravy of yogurt or coconut. Veg kurma is prepared in two different methods. In north India, this dish is prepared by adding Curd or cream while in south India, coconut is added to make gravy Thicker.
South Indian Food always attracts us towards some mouth-watering dishes like topi dosa, Dahi Vada, idli and pesarattu with sambar and coconut or Ginger chutney. In South India, VEG Kurma Curry is very popular and is loved by the people Very much because of its aroma flavour and Taste. People here Usually Serve this Curry in Lunch or Dinner with Roti, poori, Dosa, Paratha or White Rice.
Although, there are various ways of to make this Delicious Cuisine. But, today we are going to try the mix of both Traditional South and north Veg Kurma Recipe.

Ingredients to make masala Paste for Veg Kurma Recipe:
Grated Coconut – 1 small Cup
Cashew ( Kaju ) – 10
Grated ginger Small Piece
Garlic – 2 Cloves
Chopped Green Chillies – 2
Poppy seeds ( khus khus ) – 2 Table Spoon
Green Cardamom – 1
Small Piece of Cinnamon
Ingredients Required To Make Veg Kurma Recipe:
Chopped French Beans ½ Cup
Fresh Green Peas ( matar ) ½ Cup
Finely Chopped Onions 1
Chopped Carrot ½ Cup
Peeled & Chopped Potato ½ Cup
Sliced and Chopped Tomato 1
Bay Leaf 1 piece
Ginger-Garlic Paste 1 Tea Spoon
Beaten Curd or yogurt ½ Cup
Red Chilli Powder ½ tea spoon
Coriander Powder 1 teaspoon
Jeera or Cumin Powder 1 Teaspoon
Turmeric Powder 1/3 Teaspoon
Oil or Ghee 2 tablespoon
Salt to taste
For Garnishing
Coriander Leaves
Cashew Nuts
Grated Coconut
Preparation Of the Paste :
Soak poppy seeds And Cashew nuts in hot water for 15-minutes.
Rinse and Drain excess water from cashew nuts and soaked poppy seeds and grind them in a Chutney Jar. If Required add Water but don’t Make The Paste too Runny.
Add grated coconut, Chopped green chillies, cardamom, Garlic, ginger, cinnamon and grind them Into Smooth Paste.
Take the Paste out of the jar and Keep it aside in a Plate or bowl.
Preparation Of The gravy For Veg Kurma Recipe :
Wash all the Chopped vegetables.
Put a bowl over Medium flame and add 3 cups of Water.
Add Chopped potato, Chopped carrot, Green peas, Chopped French Beans.
Add two Tea Spoons Of Salt to It.
Boil all vegetables for 5- 6 minutes on Medium flame.
When All the Veggies Become Little tender then Turn Off the Flame and Drain the Excess Water From the bowl.
Keep the boiled water aside, as we are going to need that Water later.
Put a Pan on the stove over medium flame.
Add Oil Or Ghee to It.
Add Chopped Onion and Bay Leaf.
When the Onions turn brown In colour, Add Ginger Garlic Paste and Stir it Well For 2 Minutes.
Add Sliced tomato to It and make Sure the Tomato Turn soft.
Now, Add the paste Which We Have Prepared For Veg Kurma .
Stir It Well For 2-3 minutes.
Add yogurt or Beaten curd.
Now, add all the Spices like red chilli powder, Jeera powder and turmeric powder and Cumin Powder.
Mix It Well and Cook For 4-5 minutes.
Now, add all the boiled Vegetables and 3 cups drained water from boiled vegetables.
Add Salt to the gravy as per your Taste.
Stir the Gravy Well until It Turns thick enough.
Cover the Gravy with lid For 10 minutes.
Watch and mix in between 2-3 Times.
When you think the Veg kurma is ready to Eat, then Turn Off the Flame and Transfer the Curry into A Serving Bowl.
Garnish It With Coriander Leaves and Cashew Nuts. If you Are a Food Lover you can Also add Butter to It.
